A Moldavian table, course by course
- Borsch, stew, paparăA boletus borsch, a pork stew (tochitură) and cabbage pies (vărzări), or a papară (an omelette with cracklings) and pârjoale sprinkled with plum brandy with fenugreek.

- From the water and the forestHârzob (trout smoked in fir branches), monastic chicken, pickled saffron milk caps, cheese polenta, or the potato and onion pies called “guguluf”. Freshly gathered mushrooms or fresh fish are often on offer at guesthouses.

- For dessertAlivenci, the famous “poale-n brâu” pies, or a spoonful of raspberry, blueberry or rose confiture.

- At ChristmasHousewives serve Moldavian tochitură and turta cu julfă, a delicacy of fine pastry sheets filled with crushed hemp seeds, also called “Jesus’ Diapers”.

- Forest fruit and honeyBlueberries, cranberries, strawberries, raspberries and blackberries come to the table as confiture, sorbet, jam, cakes, juices, teas and syrups. Acacia, lime, rape or polyfloral honey sits beside teas of wild thyme, St John’s wort, cowslip, elder, lime and mint.

- Autumn preservesPickles, zacusca and all sorts of vegetables, made to recipes known only to the local housewives, make menus fit for a royal feast.
